Fluffy Pancakes (vegan, GF)

Ingredients

  • 3 cups gluten free flour (I use a mix of sweet rice, white rice, tapioca starch, and cornstarch)
  • 2 tsp xanthan gum
  • 2 Tbsp baking powder
  • 1 tsp salt
  • 1/4 cup brown sugar
  • 2 cups unsweetened plain almond milk
  • 1 1/4 cup water
  • 1/4 cup canola oil

Instructions

  • Mix flour, xanthan gum, baking powder, salt, and brown sugar in large mixing bowl.
  • Add wet ingredients and mix until combined.  Do not over mix!
  • Cook over low heat in cast iron pan.  Low and slow.
  • Keep warm in low oven until ready to serve.
