Krumkake (Vegan, GF)

Ingredients

  • 10 Tbsp Earth’s Balance, melted and cooled
  • “sticky” egg
    2 Tbsp flaxseed meal
    3oz (or one GoGo squeeze) hot applesauce
    2 tsp xanthan gum
    2 Tbsp water
  • ¾ cup  sugar
  • 1 Tbsp vanilla extract
  • 1 cup rice flour
    1/4 cup Potato starch
    1/4 cup corn starch
    1/2 cup tapioca starch
  • 2 tsp xanthan gum
  • 2 tsp baking powder

Instructions

  • Make the “sticky” egg.  Cream flax seed mixture and sugar for 3-5 minutes with the paddle beater or paddle scraper on a stand mixer . It will be ooey and gooey like melted marshmallow.
  • Slowly add butter and vanilla. 
  • Mix flours and baking powder in a separate bowl. Add to wet ingredients, slowly.  Batter will be stiff and sticky, it’s ok!
  • Follow instructions of your iron for baking.
